Homemade Tartar Sauce

Ingredients
- 0.25 cup Onion (finely chopped)
- 2 tbsp Celery (finely chopped)
- 2 tbsp Sweet pickle relish
- 1 tbsp Capers (finely chopped)
- 1 tsp Whole grain Dijon mustard
- 1 Ají Trompito (finely chopped)
- 1 cup Mayonnaise (the author recommends Royal Prince)
- Salt (to taste)
- Pepper (to taste)
- 0.5 tsp Sugar (a pinch)
- 0.5 Lemon (a squeeze of its juice)

Start by finely chopping the onion.

Also finely chop the celery.

Finely chop the capers.

Finely chop the ají trompito.

In a bowl, combine the onion, celery, sweet pickle relish, and chopped capers.

Add a teaspoon of whole grain Dijon mustard and the chopped ají trompito.

Add several generous tablespoons of mayonnaise to the bowl.

Season with a little salt, pepper, and a pinch of sugar.

Stir in a squeeze of lemon juice.

Mix everything very well until the ingredients are completely combined.

You can serve it immediately or, for best results, let it rest in the refrigerator for an hour before using.
Notes
Resting in the refrigerator allows the flavors to meld better. The ají trompito is key to the regional flavor profile of this version.
