Ingredients

  • 0.5 cup Soy sauce (Preferably Kikkoman)
  • 4 rodajas Fresh ginger (Thinly sliced; the skin can be peeled by scraping it with a spoon)
  • 0.5 cup Brown sugar
  • 1 cup Orange juice (Preferably freshly squeezed)
  • 1 tbsp Cornstarch (Dissolved before adding)
  • 1 tbsp Orange juice for dissolving the cornstarch (Can be substituted with water)

Steps

    Peel the ginger by gently scraping the skin with the edge of a spoon; this technique removes the skin without wasting much ginger. Cut it into approximately four thin slices.

    Place the soy sauce, brown sugar, ginger slices, and orange juice in a saucepan. Stir to combine the ingredients.

    Cook the mixture over medium heat for approximately 5 minutes, until it is hot and the sugar has dissolved. The ginger should perfume the sauce.

    While the sauce heats, completely dissolve the cornstarch in 1 tbsp of orange juice or water, making sure no lumps remain.

    Add the cornstarch mixture to the saucepan and cook for approximately 5 more minutes, stirring constantly, until the sauce thickens and has a glossy, coating consistency.

    Remove the sauce from the heat and serve hot with chicken gizzards, crispy fish, or another protein.
