Coconut Rice with Bacon

- 0.5 lb Smoked bacon (chopped into small pieces)
- 2 cup White rice
- 1 tbsp Five-spice powder
- 2 tbsp Sugarcane honey (cane molasses)
- 1 cup Coconut milk (preferably creamy and high quality)
- 2 cup Water
- Salt (to taste)

Chop approximately half a pound of smoked bacon into small pieces.

Transfer the bacon to a pot and cook it slowly over medium heat to render out all the fat until it is golden brown.

Add the rice to the pot with the bacon fat and mix well.

Stir in one tablespoon of five-spice powder and approximately two tablespoons of sugarcane honey to enhance the coconut flavor.

Pour in the coconut milk, water, and add a pinch of salt.

Mix all the ingredients well and let cook over medium heat, uncovered, until the liquid evaporates and the rice begins to dry.

Once the rice has dried, cover the pot and reduce the heat to low.

Cook covered over low heat for 30 minutes until the grains are tender and fully cooked.

After half an hour, uncover, stir lightly, and serve.
Notes
Sugarcane honey is used in this recipe to replace traditional sugar, providing a darker color and a more complex flavor that complements the bacon.
