Ingredients
- 3 green plantains (peeled and cut into pieces)
- 8 garlic cloves (finely chopped)
- 0.5 red bell pepper (diced)
- 0.25 cup culantro (chopped)
- 2 tbsp olive oil (for the sofrito)
- 1 cup oil for frying (as needed to fry the plantains)
- salt (to taste)
Steps
- 1
Finely chop the garlic cloves, dice the red bell pepper, and chop the culantro.
- 2
In a skillet, add a splash of olive oil and sauté the chopped garlic over low heat for 1 minute.
- 3
Add the red bell pepper to the skillet and cook for 1 more minute.
- 4
Stir in the chopped culantro, season with salt to taste, mix all the ingredients well, and turn off the heat. Set this garlic sauce aside.
- 5
Give the green plantains a few light taps before peeling them to make removing the skins easier.
- 6
Cut the plantains into pieces of your preferred size.
- 7
Fry the plantain pieces for the first time in oil over medium heat. This step is key to cooking them through without browning them too much on the outside.
- 8
Remove the plantains from the oil and flatten them (you can use a tostonera or the bottom of a cup).
- 9
Return the flattened plantains to the oil, this time very hot, and fry them until golden and extra crispy.
- 10
Serve the patacones hot and generously spoon the prepared garlic sauce over them.
Notes
To peel the plantains more easily, the author recommends giving them a few light taps before removing the skins. They are best served with a grilled pork chop.
