Ingredients

  • 225 g Ground chicken breast
  • 1 tsp Garlic powder
  • 1 tsp Italian seasoning
  • Salt (to taste)
  • Black pepper (to taste)
  • 60 ml Tomato passata
  • 35 g Light mozzarella (skim mozzarella)
  • Fresh basil (hand-torn)
  • 25 g Parmigiano Reggiano (freshly grated)
  • 0.5 tsp Avocado oil (or cooking oil of choice; used for spraying paper and topping)

Steps

    Preheat your oven to 400°F (200°C).

    Line a baking tray with parchment paper and give it a quick spray with avocado oil.

    Place the ground chicken breast on the parchment paper. Cover with another sheet of parchment and use a rolling pin to gently spread the chicken into a thin, even oval or "roundish and squarish" shape.

    Remove the top sheet of parchment and season the chicken with garlic powder, Italian seasoning, salt, and pepper.

    Spread the tomato passata onto one half of the chicken oval, leaving space around the edges so it can be sealed.

    Top the passata with the light mozzarella and hand-torn basil.

    Carefully fold the plain half of the chicken over the fillings and seal the edges to create a pocket.

    Top the pocket with freshly grated Parmigiano Reggiano and a few sprays of oil.

    Bake in the preheated oven for 20 minutes until the chicken is cooked through and the cheese is golden.

    Let the pizza pocket cool slightly before serving to avoid burning your mouth.

Notes

This recipe is great for meal prep as it can be eaten hot or cold straight from the fridge. For the best flavor, use real Parmigiano Reggiano rather than the shelf-stable grated variety.
