Ingredients

  • 400 g Cooked sweet potatoes (Approximately 2–2.5 medium sweet potatoes; they should be cooked and ready to mash.)
  • 250 g Low-fat cottage cheese
  • 100 g Sliced mushrooms
  • 50 g Diced red bell pepper
  • 50 g Diced red onion
  • 100 g Spinach (Approximately 3 packed cups.)
  • 4 Large eggs
  • 30 g Grated Parmesan (Approximately 1/3 cup, for topping.)
  • Salt (To taste.)
  • Sweet paprika (To taste.)
  • Black pepper (To taste.)

Steps

  1. 1

Preheat the oven to 180 °C. Prepare a round, ovenproof dish; you can line it or lightly grease it to make removing the tart easier.

  2. 2

Place the cooked sweet potatoes in a large bowl and mash them with a fork or potato masher until relatively smooth.

  3. 3

Press the sweet potato mash into the bottom of the round dish, spreading it into a compact, even layer to form the tart base.

  4. 4

Add the eggs, cottage cheese, sliced mushrooms, red bell pepper, red onion, and spinach to the bowl.

  5. 5

Season the mixture with salt, paprika, and black pepper to taste. Stir until the ingredients are evenly distributed and the egg and cheese coat the vegetables.

  6. 6

Pour the filling over the sweet potato base and spread it with a spatula so it is level.

  7. 7

Sprinkle the grated Parmesan evenly over the entire surface.

  8. 8

Bake at 180 °C for 35 minutes, until the center is set and the surface is golden. Carefully remove the dish, let it rest briefly, and cut into four portions.
