High Protein Chocolate Brownie Bake

Ingredients
- 200 ml Egg whites (room temperature)
- 5 ml Lemon juice
- 30 g Chocolate protein powder
- 10 g Stevia (or sweetener of choice like monk fruit)
- 60 g Cacao powder
- 4 g Baking powder (approx. 1/2 tsp)
- 30 g Almond milk
- Vanilla extract (a splash)
- Salt (a pinch)

Preheat your oven to 190°C (375°F).

In a large, clean bowl, combine the room temperature egg whites and lemon juice.

Using an electric whisk, beat the egg whites and lemon juice until they reach stiff peaks.

In a separate bowl, mix together all the dry ingredients: chocolate protein powder, stevia (or sweetener), cacao powder, baking powder, and a pinch of salt.

Gently fold the dry ingredient mixture into the beaten egg whites, being careful not to deflate the air you've whipped in.

Add the almond milk and a splash of vanilla extract to the batter and fold until just combined.

Notes
Using room temperature egg whites is essential for achieving the correct volume when whisking. An electric whisk is highly recommended as manual whisking to stiff peaks can be very labor-intensive. The entire recipe is designed as a single high-protein serving.
