Ingredients
- 275 g all-purpose flour
- 0.5 tsp baking soda
- 0.25 tsp baking powder
- 1 tbsp cornstarch
- 0.75 cup dark brown sugar (packed)
- 3 tbsp granulated sugar
- 1 egg (large, cold (plus 1 large egg yolk, cold))
- 1 egg yolk (cold)
- 125 g salted butter (melted and cooled)
- 2 tsp vanilla bean paste
- 1 cup semisweet chocolate chips (plus an unspecified amount more for topping; reserve some for the top)
- 0.5 cup Nutella (for the filling)
- pan grease (for greasing the 8-inch round baking pan; amount not stated)
- parchment paper (to line the 8-inch round baking pan; amount not stated)
Steps
- 1
In a bowl, whisk together the all-purpose flour, baking soda, baking powder, and cornstarch. Set the dry mixture aside.
- 2
In a separate bowl, whisk the melted and cooled salted butter with the packed dark brown sugar and granulated sugar until combined.
- 3
Add the cold egg, cold egg yolk, and vanilla bean paste to the butter-and-sugar mixture. Whisk until smooth and glossy.
- 4
Gradually fold the dry mixture into the wet mixture just until combined. Do not overmix.
- 5
Fold in the semisweet chocolate chips, reserving some to press on top.
- 6
Grease and line an 8-inch round baking pan.
- 7
Press approximately half of the cookie dough into the bottom of the prepared pan, bringing it slightly up the sides.
- 8
Spread the Nutella in the center, leaving a border around the edges.
- 9
Cover with the remaining cookie dough and seal the edges completely so the Nutella does not leak out.
- 10
Press the reserved chocolate chips onto the top.
- 11
Bake at 350°F (175°C) for approximately 25–30 minutes, until the edges are golden brown and the center looks slightly soft.
- 12
Let the cookie pie cool in the pan for at least 30–45 minutes before slicing. This helps the center set while keeping the cookie soft and chewy.
Notes
The source does not specify how much extra chocolate chips to reserve or which ingredient to use for greasing the pan. The stated 30–45-minute cooling period is included in the total time estimate.
