Ingredients
- 0.5 Large potato (Thinly sliced; approximately 75 g of flesh.)
- 1 puñado grande Fresh spinach
- Chicken breast (The post does not specify an amount; an individual serving of approximately 100 g is estimated, preferably cooked and shredded or cut into small pieces.)
- 1 loncha Low-fat cheese (Approximately 20 g.)
- Oil for greasing the skillet (As needed to lightly coat the skillet; approximately 1 tsp.)
Steps
- 1
Wash and dry the potato. Cut it into very thin, even slices using a mandoline or a sharp knife so that they cook completely within the specified time.
- 2
Prepare the spinach and chicken. Wash and drain the spinach; cut or shred the chicken breast into small pieces so the filling is evenly distributed. The post does not indicate whether the chicken starts raw or cooked; to maintain the 16-minute cooking time, use chicken that is already cooked.
- 3
Lightly grease a nonstick skillet with oil and place it over low heat. The skillet should be just lightly coated with fat, without excess oil.
- 4
Place some of the potato slices in the skillet in a circular pattern, leaving no gaps between them. Slightly overlap the slices to create a continuous base, reserving the rest to cover the filling.
- 5
Add the spinach to the center of the potato base.
- 6
Add the chicken over the spinach and place the slice of low-fat cheese on top.
- 7
Completely cover the filling with the remaining potato slices, making sure no part of the filling is exposed. Cover the skillet and cook over low heat for 8 minutes, until the potato is tender and the base is golden brown.
- 8
Slide the preparation onto a plate or carefully turn it over using a wide spatula. Return it to the skillet so the other side is in contact with the hot surface.
- 9
Cover the skillet again and cook over low heat for another 8 minutes, until the potato is fully cooked and golden brown on both sides and the cheese has melted.
- 10
Remove the lid, check that the potato is tender by piercing it with a knife, and serve immediately.
Notes
The author indicates that the filling can be varied to taste. It is important to cook over low heat with the skillet covered so the potato cooks completely without burning. If raw chicken is used, it must be fully cooked before adding it or the cooking time must be extended until it reaches 74 °C in the center.
