Pizza-Flavored Chicken Roll-Ups

Chicken roll-ups filled with tomato and cheese, coated with Parmesan and cooked in an air fryer until golden. They are a gluten-free and flour-free option, with an alternative method for baking them.

Ingredients

  • 300 g Ground chicken or turkey (Chicken or turkey may be used; form a thin rectangular layer.)
  • 3 Sliced cheese (The author used light Havarti.)
  • 4 tbsp Crushed tomatoes or tomato sauce (Spread over the meat; use a thick sauce to prevent the roll from falling apart.)
  • 3 tbsp Grated Parmesan cheese (Heaping tablespoons; use to coat the medallions.)
  • Oil (Use enough to lightly grease your hands and prevent the meat from sticking.)
  • Dried oregano (Optional, to taste.)

Steps

    Place a sheet of parchment paper on the work surface. Lightly grease your hands with oil so the meat does not stick.

    Spread the ground chicken or turkey over the paper. Press it down and shape it into a thin, even rectangle, making sure there are no overly thin areas or holes.

    Spread the 4 tbsp of tomato over the meat, leaving a small border around the edges to make rolling easier.

    Sprinkle oregano to taste over the tomato, if desired.

    Place the three slices of cheese over the tomato and oregano, distributing them evenly.

    Use the parchment paper to help roll the meat from one of the long sides. Press gently as you go to form a compact, sealed roll.

    Carefully remove the parchment paper. Cut the roll into approximately five similarly sized medallions.

    Coat each medallion in the grated Parmesan, especially covering the outside so it browns during cooking.

    Place the medallions in the air fryer basket without overlapping them. Cook at 180 °C for 15 minutes, turning them halfway through so they brown evenly.

    Check that the center is fully cooked and that the meat reaches 74 °C. Serve hot.

Notes

They can also be baked in a preheated oven at 200 °C for 20 minutes, turning them halfway through. Do not overcrowd the air fryer; cook in batches if necessary.
