Quick sugar-free, flourless mandarin cake
Individual, fluffy mandarin cake made with ground almonds or rolled oats, with no added sugars. It cooks quickly in the microwave, although it can also be baked.

Ingredients
- 2 Mandarins (Peeled; remove the seeds if present.)
- 2 Eggs
- 7 tbsp Ground almonds (Or substitute with 6 tbsp of rolled oats; use only one of the two options.)
- 6 tbsp Rolled oats (Alternative to ground almonds; use only if almonds are not used.)
- 1 tsp Baking powder
- Sweetener (Optional, to taste.)
- Greek yogurt (Optional, for serving.)
- Mandarin zest (Optional, for serving.)
Steps

Place the peeled and seeded mandarins, eggs, ground almonds or rolled oats, baking powder and, if desired, the sweetener in a blender or food processor. Blend until smooth.

Pour the mixture into an approximately 10 cm microwave-safe mold.

Microwave at 900 W for 8 minutes. The cake is ready when it looks set and a toothpick inserted into the center comes out clean.

Alternatively, preheat the oven to 180 °C with heat from above and below. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Let it rest briefly, unmold if desired, and serve with Greek yogurt and mandarin zest.
Notes
The recipe is intended for a 10 cm mold. The microwave version takes approximately 8 minutes at 900 W; the oven version requires 25-30 minutes at 180 °C.
