Ingredients

  • 2 Mandarins (Peeled; remove the seeds if present.)
  • 2 Eggs
  • 7 tbsp Ground almonds (Or substitute with 6 tbsp of rolled oats; use only one of the two options.)
  • 6 tbsp Rolled oats (Alternative to ground almonds; use only if almonds are not used.)
  • 1 tsp Baking powder
  • Sweetener (Optional, to taste.)
  • Greek yogurt (Optional, for serving.)
  • Mandarin zest (Optional, for serving.)

Steps

  1. 1

Place the peeled and seeded mandarins, eggs, ground almonds or rolled oats, baking powder and, if desired, the sweetener in a blender or food processor. Blend until smooth.

  2. 2

Pour the mixture into an approximately 10 cm microwave-safe mold.

  3. 3

Microwave at 900 W for 8 minutes. The cake is ready when it looks set and a toothpick inserted into the center comes out clean.

  4. 4

Alternatively, preheat the oven to 180 °C with heat from above and below. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

  5. 5

Let it rest briefly, unmold if desired, and serve with Greek yogurt and mandarin zest.

Notes

The recipe is intended for a 10 cm mold. The microwave version takes approximately 8 minutes at 900 W; the oven version requires 25-30 minutes at 180 °C.
