Ingredients
- 1 Swordfish steak
- 4 dientes Garlic (thinly sliced)
- 2 Cayenne peppers
- Extra-virgin olive oil (A generous drizzle; quantity not specified)
- White wine vinegar (Quantity not specified)
- Salt (A little; quantity not specified)
- Fries (To serve; quantity not specified)
Steps
- 1
Heat a frying pan and add a generous drizzle of extra-virgin olive oil.
- 2
Add the sliced garlic and cayenne peppers, and brown them.
- 3
Remove the pan from the heat. Add the white wine vinegar and stir to emulsify the sauce.
- 4
Remove the sauce from the pan; cook the swordfish in the same pan, without the sauce, for 1 minute over heat setting 8 out of 9.
- 5
Turn the swordfish over and add a little salt.
- 6
Add the sauce and cook for another 30 seconds.
- 7
Serve the swordfish with fries.
Notes
No quantities are specified for the oil, vinegar, salt, or fries. The method does not say when or how to remove the sauce from the pan; it is understood that it should be set aside so the swordfish can be cooked without it.
