Ingredients

  • 2 Chicken thighs (Bone-in or boneless, depending on availability)
  • 3 Carrots (Chopped)
  • 3 Leeks (Chopped)
  • 42 g Noodles (Uncooked)
  • Olive oil (A drizzle, for searing the chicken and sautéing the vegetables)
  • Salt (To taste)
  • Pepper (To taste)
  • Water or vegetable broth (Enough to cover the chicken; if using broth, choose vegetable broth)

Steps

  1. 1

Heat a drizzle of olive oil in a pot. Sear the chicken thighs on both sides and transfer them to a plate; set aside.

  2. 2

In the same pot, add the chopped leeks and carrots. Sauté them for a few minutes.

  3. 3

Return the chicken to the pot. Season with salt and pepper to taste, then cover with water or vegetable broth.

  4. 4

Cook over medium-low heat for 1–1½ hours, allowing the broth to simmer gently and develop flavor.

  5. 5

Remove the vegetables from the pot, purée them, and return them to the broth to give it more body.

  6. 6

Shred the chicken and return it to the soup.

  7. 7

Add the noodles and cook until tender; serve the soup piping hot.
