Weights are estimates. Together, the ingredients weigh about 1.15 kg before cooking, which is about 70 g per serving.
Steps
Add the instant yeast, sugar, salt, and all-purpose flour to a mixing bowl and mix well. Begin with 4½ cups (560 g) flour; reserve the additional flour to use only if needed.
Add the warm milk, melted salted butter, and egg to the dry ingredients. Mix until a dough forms.
Knead the dough until it is smooth and no longer sticky. If it remains too sticky, add up to ¼ cup (about 30 g) more flour as needed.
Place the dough in a lightly greased bowl. Cover and let it rise in a warm place for about 1 hour, or until doubled in size.
Punch down the risen dough and divide it into portions of about 75 g each; the recipe yields 16 rolls.
Shape each portion into a smooth ball. Arrange the balls in a greased baking tray or on a tray lined with parchment paper.
Cover the rolls and let them rise again for 30 minutes, or until puffy.
Bake at 350°F (180 °C) (175°C (350 °F)) for about 18–22 minutes, until golden brown and fully baked.
While the rolls are still hot, brush them with melted butter.
Notes
The source gives 6 tbsp (75 g) sugar, with an optional sweeter variation of 8 tbsp (100 g). Flour is listed as 4½–4¾ cups (560–590 g), starting with 4½ cups and adding up to ¼ cup more only if needed. The brushing butter and greasing fat are called for without amounts. The source does not specify a separate oven-preheating instruction.
