Weights are estimates. Together, the ingredients weigh about 1.29 kg before cooking, which is about 130 g per serving.
Steps
Preheat the oven to 325°F (160 °C) (165°C (325 °F)). Grease and line a loaf pan.
In a mixing bowl, rub the sugar and lemon zest together with your fingers until fragrant.
Add the eggs and whisk. Mix in the vegetable oil, yogurt, coconut milk, lemon juice, vanilla extract, and coconut extract.
Add the flour, baking powder, baking soda, and salt. Fold gently until the dry ingredients are almost combined; avoid overmixing.
Fold in the shredded coconut.
Pour the batter into the prepared loaf pan. Bake on the middle rack until a toothpick inserted into the center comes out clean or with a few moist crumbs. The source does not specify a baking duration.
Let the loaf cool completely.
In a bowl, mix the icing sugar, coconut milk, coconut extract, and the optional lemon juice for a thinner glaze until smooth.
Spread the icing over the cooled loaf.
Notes
The recipe does not state the loaf pan size or baking duration; check doneness with the toothpick test. Coconut extract is given as 1–2 tsp in the cake and coconut milk as 2½–3 tsp in the icing.
