Weights are estimates. Together, the ingredients weigh about 1.21 kg before cooking, which is about 150 g per serving.
Steps
Preheat the oven to 350°F (180 °C) (175°C (350 °F)).
Coat the inside of a 9 × 5-inch loaf pan with butter. Line the pan with parchment paper, then coat it with non-stick cooking spray.
In a medium bowl, whisk together the flour, 2 teaspoons ground cinnamon, salt, and baking powder. Set aside.
In the bowl of a stand mixer, cream the brown sugar, ¼ cup granulated sugar, and softened butter on medium speed. The mixture will be crumbly at first; continue mixing until it comes together.
Add the vanilla extract and eggs to the mixer bowl and combine.
Add the milk and mix until combined.
Turn the mixer to low and slowly add the flour mixture, mixing between additions until incorporated.
Remove the bowl from the mixer and gently stir in the chopped apples by hand.
Pour the batter into the prepared loaf pan.
Combine the remaining 2 tablespoons granulated sugar with the remaining 1 teaspoon ground cinnamon, then sprinkle the mixture over the top of the batter.
Bake for 50–55 minutes, until a toothpick inserted into the center comes out with a few crumbs attached.
Let the bread cool in the loaf pan for about 15–20 minutes. Transfer it to a cooling rack.
Notes
The recipe suggests Granny Smith apples for their tartness; Gala, Pink Lady, Braeburn, Honeycrisp, Golden Delicious, or a mix of apple varieties can also be used. Apple pieces need not be exactly uniform, but chop them into similar-sized chunks. The instructions mention buttering the pan in addition to the measured softened butter, without specifying an extra amount.
