Weights are estimates. Together, the ingredients weigh about 1.35 kg before cooking, which is about 340 g per serving.

Steps

  1. Peel the potatoes and place them in a pot of cold, salted water. Boil for about 8 minutes, until partially cooked but still firm in the center.

  2. Drain the potatoes very well and let them cool until safe to handle. Pat the surface dry with paper towels, then grate them using the large holes of a box grater.

  3. In a large bowl, combine the grated potatoes with the cornstarch, Parmesan, cheddar, garlic powder, onion powder, paprika, black pepper, and salt to taste. Mix gently until evenly combined.

  4. Take a portion of the mixture and press it firmly into a thick rectangle or oval. Repeat with the remaining mixture.

  5. Heat about 1 inch of oil in a skillet over medium heat until it reaches 360 °F (180 °C) (182 °C (350 °F)). Deep-frying is also noted as optional.

  6. Carefully add the hash browns to the oil and fry for about 3–4 minutes per side, until deeply golden and crispy.

  7. Transfer the hash browns to a wire rack or a paper towel-lined plate to drain off excess oil.

  8. In a small bowl, combine the mayonnaise, freshly grated garlic, garlic powder, lemon juice, paprika, black pepper, and salt to taste. Mix until smooth and creamy.

  9. Refrigerate the sauce for 15–20 minutes before serving.

  10. Garnish the hot hash browns with freshly grated Parmesan and chopped parsley. Serve with the cold sauce.

Notes

The amount of oil for frying and the amounts of Parmesan and parsley for garnish are not specified. The recipe calls for 1 inch of oil in the pan and notes that deep-frying is optional.
