Crispy Fried Chicken with Cheese and Spicy Sauce

Ingredients
- 2 Chicken breast (boneless and skinless, flattened)
- 100 g Mozzarella cheese (block or sticks for stuffing)
- 1 cup All-purpose flour (for the initial coating)
- 2 Eggs (beaten)
- 2 cup Panko (Japanese breadcrumbs for maximum texture)
- 500 ml Vegetable oil (for frying)
- 0.25 cup Hot sauce (Sriracha or Buffalo type) (for the coating)
- 2 tbsp Mayonnaise (to mellow the sauce)
- Salt and Pepper (to taste)

Season the chicken breasts with salt and pepper on both sides.

Place the mozzarella cheese in the center of the breast and roll or fold it, ensuring the cheese is completely sealed inside the meat.

Dredge each piece of stuffed chicken in the flour, shaking off the excess.

Dip the floured chicken into the beaten eggs until well coated.

Generously coat the chicken with panko, pressing lightly so it adheres well and creates a thick layer.

Heat the vegetable oil in a deep skillet or fryer to 175°C (350°F).

Fry the chicken carefully until the exterior is deep golden brown and crispy, and the chicken is cooked through (approximately 6-8 minutes per side).

In a small bowl, mix the hot sauce with the mayonnaise until smooth.

Drizzle the fried chicken with the hot sauce mixture before serving immediately while the cheese is still melted.
Notes
To ensure the cheese doesn't leak out, you can use toothpicks to seal the edges of the chicken before breading, but remember to remove them before eating.
