Fried Chicken Sandwich with Cheese and Bacon
An extremely crispy fried chicken sandwich filled with melted cheese and bacon, served on toasted brioche buns with a creamy sauce.

Ingredients
- 1 Chicken breast (boneless and skinless, butterflied)
- 2 rebanadas Mozzarella cheese
- 2 tiras Bacon (cooked and crispy)
- 1 cup Wheat flour (for the coating)
- 2 Eggs (beaten)
- 1.5 cup Panko breadcrumbs (for an extra-crispy finish)
- 1 pieza Brioche bun (cut in half)
- 1 tbsp Butter (for toasting the bun)
- 2 tbsp Mayonnaise
- Vegetable oil (enough for frying)

Prepare the chicken breast by cutting it in half horizontally (butterfly-style) without separating it completely, then lightly pound it with a meat mallet.

Place the mozzarella slices and cooked bacon strips in the center of the chicken breast.

Fold the chicken over the filling and seal the edges by pressing them firmly so the cheese does not escape.

Coat the stuffed chicken first in the wheat flour, making sure to cover all sides, then shake off the excess.

Dip the floured chicken into the beaten eggs until completely coated.

Press the chicken firmly into the panko breadcrumbs to create a thick, even breading.

Heat the vegetable oil in a deep skillet or deep fryer to 175°C (350°F).

Carefully fry the chicken until the exterior is deeply golden and crispy and the chicken is cooked through (approximately 6-8 minutes). Remove and drain on a wire rack.

In a separate skillet, melt the butter and toast the cut sides of the brioche bun until golden.

Spread mayonnaise on both bun halves, add the hot fried chicken, and close the sandwich.
Notes
To ensure the cheese does not escape, you can use toothpicks to secure the edges of the chicken before breading, but remember to remove them before eating.
