Ingredients
- 120 g salted butter (Brown for the batter; reserve 2–3 thin cold strips for the topping. The source gives ½ cup + 1 tbsp for the 120 g amount.)
- 3.5 very ripe bananas (Use 3–4; mashed. Source also gives about 1½ cups.)
- 150 g brown sugar (Packed.)
- 120 g Greek yogurt or sour cream (Room temperature; choose Greek yogurt or sour cream.)
- 2 eggs (Room temperature.)
- 250 g all-purpose flour
- 1 tsp baking soda
- 0.75 tsp baking powder
- 150 g chocolate chips or chopped chocolate (Choose chocolate chips or chopped chocolate; source says about 1 cup.)
- cold salted butter (2–3 thin strips, for topping; taken from the listed butter.)
Steps
- 1
Preheat the oven to 175°C (350°F). Grease a loaf pan and line it with parchment paper.
- 2
Melt the salted butter in a saucepan over medium-high heat, stirring continuously until golden brown and nutty, about 5–8 minutes.
- 3
Remove the browned butter from the heat and let it cool for 15 minutes.
- 4
In a bowl, whisk together the flour, baking soda, and baking powder.
- 5
Add the mashed bananas, brown sugar, Greek yogurt or sour cream, and eggs to the slightly cooled brown butter. Whisk until well combined.
- 6
Add the dry ingredients to the wet mixture and gently fold until just combined. Do not overmix.
- 7
Fold in the chocolate chips or chopped chocolate.
- 8
Pour the batter into the prepared loaf pan and smooth the top. Run a knife down the center to make a shallow crease, then place 2–3 thin strips of cold butter in the crease.
- 9
Bake for 60–65 minutes, beginning to check around 30–35 minutes. If the top gets too dark, loosely cover the loaf with foil for the remaining baking time.
- 10
Check doneness by inserting a toothpick into the center; the bread is ready when it comes out clean or with a few moist crumbs.
- 11
Let the banana bread cool before slicing. Serve and enjoy.
Notes
The source gives two alternatives for the dairy ingredient and for the chocolate. It does not specify the loaf-pan size or a distinct cooling duration beyond cooling before slicing.
