Ingredients

  • 1 kg chicken pieces (skin-on thighs or drumsticks)
  • 1 cup wheat flour (for the first coating)
  • 3 eggs (beaten for the egg wash)
  • 2 cup bread crumbs or panko (for the crunchy outer layer)
  • salt (to taste)
  • black pepper (to taste)
  • 500 ml vegetable oil (for frying)

Steps

    Season the chicken pieces generously with salt and pepper on all sides.

    Set up three dredging stations: a plate with flour, a bowl with the beaten eggs, and a third plate with the bread crumbs or panko.

    Dredge each piece of chicken in the flour, shaking off the excess.

    Dip the floured chicken into the beaten egg, ensuring it is completely coated.

    Press the chicken firmly into the bread crumbs so the crust adheres well and is uniform.

    Heat the oil in a deep skillet or fryer over medium-high heat (approximately 175°C / 350°F).

    Fry the chicken in batches, without overcrowding the pan, until the skin is golden and crispy and the meat is cooked through (about 12-15 minutes depending on the size of the piece).

Notes

For a crispier result, ensure the oil is at the correct temperature before adding the chicken. If the oil is too cold, the breading will absorb too much grease.
