Steps
Preheat the oven to 350°F (180 °C) (175°C (350 °F)). Grease a 9 × 13-inch baking dish with butter.
Open both cans of apple pie filling and transfer the filling to a large mixing bowl. Cut any large apple slices if necessary.
Sprinkle the ground cinnamon and nutmeg over the filling, then stir until evenly coated.
Lay one flour tortilla flat and spoon about ½ cup of apple filling across its center. Roll the tortilla tightly around the filling.
Place the filled tortilla seam-side down in the prepared baking dish. Repeat with the remaining tortillas and filling.
In a saucepan over medium heat, melt the unsalted butter.
Add the granulated sugar and packed brown sugar to the melted butter, stirring until dissolved.
Pour in the water and simmer for about 3 minutes, stirring.
Remove the saucepan from the heat and stir in the caramel sauce.
Pour the caramel-butter sauce over the rolled enchiladas. Let them rest for about 10 minutes so they absorb the sauce.
Bake in the preheated oven for 25–30 minutes, until golden brown.
Let the enchiladas cool for 10 minutes.
Mix the crushed graham crackers and chopped pecans together for the topping.
In a bowl, whisk the powdered sugar, whole milk, and vanilla extract until smooth.
Drizzle the icing over the enchiladas before serving, and add the graham-cracker and pecan topping.
Notes
The source recommends preparing the filling and rolling the enchiladas up to 24 hours ahead; cover the greased dish tightly and refrigerate. The sauce is best made on baking day, but can be made ahead and refrigerated for up to 3 days; reheat before pouring. Cool leftovers completely, cover or transfer to an airtight container, and refrigerate for up to 3 days; reheat in the microwave or oven until warm. For freezing, cool completely and wrap or store airtight for up to 2 months; thaw overnight in the refrigerator and reheat at 350°F (175°C) for 15–20 minutes. The written steps do not explicitly say when to add the topping mixture; it is labeled as a topping, so it is included with the final serving step.
