Ingredients
- 350 g peaches (sliced paper-thin; use peaches that are not fully ripe)
- 3 tsp cinnamon
- 2 eggs (large)
- 150 g full-fat quark (full-fat quark)
- 50 g powdered sugar (sugar-free substitute recommended)
- 110 g flour (flour)
- 8 g baking powder (baking powder)

Preheat the oven to 170°C (340°F) using the convection (fan) setting.

Slice the peaches into paper-thin slices. It is important to use peaches that are not yet very ripe so they remain firm and do not release too much moisture.

Place the thin peach slices in a large bowl and toss them with the cinnamon. Set aside.

In a separate bowl, whisk the eggs together with the full-fat quark and the (sugar-free) powdered sugar until light and airy.

Add the flour and baking powder to the wet mixture. Mix thoroughly with a whisk until you have a smooth batter.

Add the peach slices to the batter and fold them in carefully, ensuring every slice is coated in batter.

Transfer the mixture into a 24 cm cake tin.

Bake in the preheated oven for approximately 60-70 minutes. Use a skewer to check for doneness; it should come out clean.

Allow the cake to cool in the tin for 20 minutes before transferring it to a wire rack to cool completely.
Notes
Tip: Store the cake in the refrigerator; it will become more compact and flavorful. Variation: For a higher protein version, replace one-third of the flour with protein powder.
