Dip the rice paper sheets one by one into the egg mixture, ensuring both sides are fully coated.

Place the moistened rice paper sheets on a slightly damp cutting board to prevent them from sticking.

In a small bowl, mix the cottage cheese, vanilla, protein powder, and 0.5 tsp cinnamon together until a thick, smooth substance forms.

Spread the filling mixture in the center of the rice paper sheets and roll them up tightly.

Brush the outside of the roll with the remaining egg-milk mixture.

Place the roll on a piece of parchment paper in the airfryer basket.

Air fry at 160°C (320°F) for 25 to 28 minutes. Turn the roll over approximately three times during cooking to ensure it becomes evenly brown and crispy.

While the roll is cooking, prepare the frosting by mixing the powdered sugar substitute, a pinch of cinnamon, and 2 tsp skimmed milk.
