Ingredients

  • 250 g bucatini (dry)
  • 2 courgettes (sliced)
  • 2 cloves garlic (thinly sliced)
  • 60 g green olives
  • 120 ml olive oil (enough to generously cover the base of the pan; plus a drizzle for serving is mentioned but not quantified)
  • 2 tbsp salted butter
  • 0.5 lemon juice (juice of 1/2 lemon)
  • 1 tbsp lemon zest
  • 1 handful basil leaves (chopped)
  • 2 tbsp fresh chives (chopped)
  • 20 g Parmesan (grated)
  • salt (to taste)
  • black pepper (to taste)
  • tbsp stracciatella (a few heaped tablespoons)
  • 3.5 tbsp pistachios (chopped; source gives a range of 3–4 tbsp)
  • pasta water (reserve a splash from cooking the pasta)

Steps

  1. 1

Bring water to a boil in an 18 cm saucepan. Add the dry bucatini and cook according to the package instructions, about 10 minutes, until cooked.

  2. 2

While the pasta cooks, slice the courgettes and thinly slice the garlic. Chop the basil and chives if needed, and prepare the remaining ingredients.

  3. 3

Heat the olive oil and salted butter together in a 28 cm frying pan over medium-high heat. Use enough oil to generously cover the base of the pan; the courgettes will be shallow-fried.

  4. 4

When the oil and butter are hot, add the sliced courgettes. Fry for a few minutes, until golden and cooked through.

  5. 5

Add the thinly sliced garlic and green olives. Fry for another 5–7 minutes, mixing occasionally; avoid burning the garlic.

  6. 6

Drain the bucatini, reserving a splash of pasta water.

  7. 7

Add the cooked bucatini to the frying pan with a splash of the reserved pasta water, lemon juice, lemon zest, grated Parmesan, chopped basil and chopped chives.

  8. 8

Mix everything together, taste, and season with salt and pepper to your preference.

  9. 9

Serve in bowls topped with stracciatella and chopped pistachios, with a drizzle of olive oil.

Notes

The source does not specify exact quantities for the pasta water, serving drizzle of olive oil, or stracciatella beyond “a few heaped tbsp.”
