Ingredients
- 2 cups Dry or fresh pasta (Use pasta of your choice.)
- 25 g Salted butter
- 2 Shallots (Small; finely chopped.)
- 2 cloves Garlic (Chopped.)
- 4 tbsp Tomato paste
- 44 ml Vodka (Grey Goose named in source.)
- 1.25 cups Double or heavy cream
- 0.333 cup Pasta water (Reserved from cooking the pasta.)
- 0.25 cup Shaved Parmesan
- Salt (To taste; salt the pasta water, and adjust the sauce to taste.)
- Black pepper (To taste; some is also used to finish.)
- Red chili flakes (A sprinkle; optional in the sauce for extra heat, and for finishing.)
- Fresh basil (Chopped; for finishing.)
- Parmesan flakes (For finishing.)
- Chives (For finishing; named in the method but not in the ingredient list.)
Steps
- 1
Bring a pot of salted water to a boil. Cook the pasta until al dente, following the timing on the packet. Reserve ⅓ cup (80 g) pasta water before draining.
- 2
Heat a frying pan over medium-high heat and add the salted butter.
- 3
Add the finely chopped shallots and fry for a few minutes, until softened.
- 4
Add the chopped garlic and tomato paste, then mix. For extra heat throughout the sauce, add some red chili flakes at this point.
- 5
Pour in the vodka and let it cook off for about 30 seconds.
- 6
Add the cream and mix. Reduce the heat to medium-low.
- 7
Add salt, black pepper, shaved Parmesan, and some of the reserved pasta water. Taste and adjust the salt and pepper to your preference.
- 8
Leave the sauce on the heat to thicken, or stir in the cooked pasta without waiting for further thickening.
- 9
Serve in bowls. Finish with Parmesan flakes, black pepper, red chili flakes, chives, and basil.
Notes
The source does not specify an exact pasta-cooking time, sauce-thickening duration, or amount of finishing garnishes. The source mentions both salted butter and salting the pasta water/sauce.
