Single-Serve Vanilla Quark Cake with Cinnamon

Ingredients
- 2 Gelatin sheets (sheets)
- 30 g Maria biscuits (ground into crumbs)
- 25 g Medjool date (pitted)
- 200 g Low-fat vanilla quark (low-fat vanilla quark)
- 10 g Protein powder (vanilla flavor)
- Cinnamon (to taste, for sprinkling)

Place the 2 gelatin sheets in a bowl of cold water to soak and soften.

Place the Maria biscuits in a food processor or chopper and pulse until they become fine crumbs.

Add the 25g of Medjool date to the biscuit crumbs and mix again until the mixture becomes a sticky, cohesive dough.

Press the date-biscuit mixture firmly into the bottom of a small springform pan or cake mold (approximately 12cm in diameter) to form the base.

Remove the gelatin sheets from the water and place them in a small saucepan. Heat gently over low heat until the sheets melt into a liquid jelly.

Add the 200g of vanilla quark and 10g of protein powder to the saucepan with the gelatin. You can optionally add extra vanilla extract or sweetener if you prefer a sweeter taste.

Turn off the heat and stir everything together thoroughly until the mixture is completely smooth and combined.

Pour the quark mixture over the prepared biscuit base in the mold.

Place the cake in the refrigerator and let it set for at least 3 to 4 hours.

Once set, remove from the mold and sprinkle with ground cinnamon before serving.
Notes
