Ingredients

  • 2.5 Sliced bread (2 to 3 slices)
  • 1 Egg (large)
  • 0.33 cup Milk (80ml)
  • 0.5 scoop Vanilla protein powder (for the toast mixture)
  • 1 tbsp Brown sugar stevia or sweetener
  • 0.25 tsp Vanilla extract (optional)
  • 0.25 tsp Cinnamon (optional, for the mixture)
  • Olive oil spray (or a little butter for the pan)
  • 0.33 cup Fat-free Greek yogurt (85g)
  • 0.5 scoop Vanilla protein powder (for the filling)
  • Milk (a splash if necessary for the filling)
  • Ground cinnamon (to sprinkle between layers and on top)

Steps

  1. 1

In a bowl, whisk the egg, milk, protein powder, sweetener, vanilla, and cinnamon until well combined.

  2. 2

Dip the bread slices into the mixture until they are completely coated and have absorbed the liquid.

  3. 3

Spray a skillet with olive oil spray and heat over medium heat. Cook each slice for 1 to 2 minutes per side until golden brown.

  4. 4

Meanwhile, mix the Greek yogurt with the protein powder in a small bowl. Add a splash of milk if the mixture is too thick.

  5. 5

Layer the French toast with the protein filling, sprinkling ground cinnamon between each layer.

  6. 6

Finish with an extra dusting of cinnamon on top and enjoy.
