  • 1 Large sweet potato (Approximately 1 cup once mashed; peel after roasting.)
  • 0.5 cup All-purpose flour
  • 0.5 cup Shredded light mozzarella (For the dough.)
  • 0.5 tsp Garlic powder (For the dough.)
  • 0.5 tsp Onion powder (For the dough.)
  • Salt (To taste, for the dough.)
  • Pepper (To taste, for the dough.)
  • 225 g Extra-lean ground beef (Approximate amount.)
  • 0.5 Yellow onion (Medium, very finely chopped.)
  • 2 cup Fresh spinach
  • 0.5 tsp Garlic powder (For the filling.)
  • 0.5 tsp Onion powder (For the filling.)
  • 0.5 cup Shredded light mozzarella (For the filling; add a little to the center of each portion.)
  • Salt (To taste, for the filling.)
  • Pepper (To taste, for the filling.)
  • Olive oil (A small amount for cooking.)
  • Greek yogurt (Optional, for serving; may be replaced with your favorite dipping sauce.)

Steps

  1. 1

Preheat the oven to 200 °C. Pierce the sweet potato several times with a fork and roast for 40–45 minutes, or until tender.

  2. 2

Remove the skin from the roasted sweet potato and mash until smooth.

  3. 3

Add the flour, ½ cup mozzarella for the dough, garlic powder, onion powder, salt, and pepper to the mash. Mix until a dough forms.

  4. 4

Place the ground beef and yellow onion in a skillet over medium heat. Add the garlic powder, onion powder, salt, and pepper for the filling, and cook.

  5. 5

Add the spinach and cook for 1–2 minutes longer, until wilted.

  6. 6

Divide the dough into 3 portions and flatten each one.

  7. 7

Place the beef mixture in the center of each portion and add a little of the reserved mozzarella for the filling.

  8. 8

Fold the dough around the filling to seal it, then gently flatten each piece into a pocket shape.

  9. 9

Add a small amount of olive oil to a skillet and cook the pockets for 3–4 minutes per side, until golden and crispy.

  10. 10

Serve hot with Greek yogurt or your favorite dipping sauce.
