Steps
Thinly slice the beef and place it in a bowl with the soy sauce for the marinade, sweetener, black pepper, and ground ginger.
Stir to coat the beef in the marinade and let it rest for about 30 minutes.
Meanwhile, make the sauce by mixing the soy sauce, teriyaki sauce, mirin, and black pepper in a small bowl.
Prepare the udon noodles according to the package instructions. If they are already cooked, separate and soften them as instructed by the author.
Heat a pan or wok over high heat with a drizzle of oil.
Add the marinated beef and sear over high heat; then transfer it to a plate and set aside.
Add the onion and a splash of water to the same pan. Cook until the onion softens.
Add the crushed garlic and ground ginger to the pan and stir-fry for a few minutes.
Add the mushrooms, bok choy leaves, and scallions. Cook until the vegetables are tender.
Return the beef to the pan, add the prepared udon noodles, and pour in all the sauce.
Stir-fry over high heat for 2–3 minutes, mixing well, until the udon noodles are thoroughly coated in a glossy, flavorful sauce.
