Ingredients

  • 180 g Peaches (Peeled)
  • 4 Eggs
  • 350 g Greek yogurt
  • 150 g Low-fat cream cheese
  • 70 g Sweetener (The indicated quantity is the amount used by the author; adjust according to the sweetening power of the product.)
  • 20 g Cornstarch
  • Cream flavoring (To taste; the author uses a pastel de nata-style flavoring.)
  • Sliced peaches (Optional topping, quantity to taste.)

Steps

    Preheat a conventional oven to 190 °C. Line an 18 cm round cake pan with parchment paper.

    Peel the peaches and weigh out 180 g. Place them in a blender together with the 4 eggs and blend until smooth.

    Transfer the peach and egg mixture to a large bowl.

    Add the Greek yogurt, low-fat cream cheese, sweetener, cornstarch, and cream flavoring.

    Whisk by hand until all the ingredients are fully incorporated and the mixture is smooth, with no obvious lumps.

    Strain the mixture through a sieve directly into the prepared pan to remove any lumps and achieve a smoother consistency.

    Bake in the conventional oven at 190 °C for 40-45 minutes. The surface should be nicely browned and the center still slightly jiggly.

    Remove the cheesecake from the oven and let it cool completely at room temperature.
