Fit Basque Peach Cheesecake

Ingredients
- 180 g Peaches (Peeled)
- 4 Eggs
- 350 g Greek yogurt
- 150 g Low-fat cream cheese
- 70 g Sweetener (The indicated quantity is the amount used by the author; adjust according to the sweetening power of the product.)
- 20 g Cornstarch

Preheat a conventional oven to 190 °C. Line an 18 cm round cake pan with parchment paper.

Peel the peaches and weigh out 180 g. Place them in a blender together with the 4 eggs and blend until smooth.

Add the Greek yogurt, low-fat cream cheese, sweetener, cornstarch, and cream flavoring.

Whisk by hand until all the ingredients are fully incorporated and the mixture is smooth, with no obvious lumps.

Strain the mixture through a sieve directly into the prepared pan to remove any lumps and achieve a smoother consistency.

Bake in the conventional oven at 190 °C for 40-45 minutes. The surface should be nicely browned and the center still slightly jiggly.
