Ingredients
- 400 ml Unsweetened coconut milk
- 20 g Reduced-fat powdered coconut milk (Alternatively, use defatted coconut flour.)
- 30 g Protein powder (Preferably vanilla or white chocolate flavored.)
- 10 g Sweetener (For the base; adjust to taste.)
- Salt (A pinch.)
- 10 g Unsweetened cocoa powder (For the topping cream.)
- Sweetener (For the cream; quantity to taste.)
- 40 ml Coconut milk (For the cocoa cream.)
- 1 Bounty (One bar; chop it or add it during the final churning stage. The weight varies depending on the size, estimated at approximately 57 g.)
Steps
- 1
Pour all the base ingredients into the ice cream maker container: unsweetened coconut milk, powdered coconut milk, protein powder, sweetener, and a pinch of salt.
- 2
Whisk vigorously until smooth, with no lumps of protein powder or powdered coconut milk.
- 3
Close the container and freeze the mixture for at least 12 hours, until completely solid.
- 4
Before processing, run the outside of the container under boiling water for approximately 30 seconds. This helps make processing in the ice cream maker easier.
- 5
Place the container in the ice cream maker and run the ice cream mode for two cycles, following the instructions for your model, until creamy.
- 6
Add the Bounty during the final processing cycle and run the mix-in mode to incorporate it and distribute the pieces throughout the ice cream.
- 7
Prepare the cream by whisking the unsweetened cocoa powder, sweetener, and coconut milk until smooth and uniform.
- 8
Spread the cocoa cream over the surface of the ice cream and gently swirl it in, leaving some visible streaks if desired.
- 9
If you do not have an ice cream maker, freeze the mixture in ice cube trays. Once completely frozen, blend it in a blender powerful enough to crush ice until creamy; add the Bounty while blending.
