Ingredients

Wash the potatoes and boil them in water until completely tender, about 35 minutes. Check for doneness by piercing them with a fork: it should slide in easily.

Transfer the boiled potatoes to a baking tray lined with parchment paper, leaving a little space between them.

Flatten each potato with the bottom of a glass, a potato masher, or another flat utensil until you obtain a thin, even layer. Be careful not to break them apart completely.

Distribute the rosemary, garlic, sweet paprika, salt, and pepper over the potatoes, making sure the spices cover the surface well.

Add the protein-rich or light cheese, distributing 15 g over each potato.

Cook in an air fryer or in a preheated convection oven at 200 °C for 25-30 minutes, until the potatoes are thin, golden, and crispy around the edges.
