Ingredients

  • 75 g flour (all-purpose flour)
  • 35 g protein powder (protein powder)
  • 375 g pear (in very thin slices (use a mandoline or cheese slicer))
  • 40 g powdered sugar substitute (powdered sugar substitute (e.g., erythritol))
  • 15 g light butter (melted)
  • 150 g 0% Greek yogurt
  • 3 eggs (size S)
  • 4 tsp cinnamon
  • 8 g baking powder

Steps

    Preheat your oven to 160°C (320°F). Grease a 24 cm cake tin or line it with parchment paper.

    Prepare the pears by slicing them very thinly. It is recommended to use a mandoline or a cheese slicer to achieve very thin, uniform slices.

    In a large mixing bowl, combine the 3 eggs, 150g Greek yogurt, 15g melted butter, and 40g powdered sugar substitute. Whisk until smooth.

    Add the dry ingredients to the wet mixture: 75g flour, 35g protein powder, 4 tsp cinnamon, and 8g baking powder. Mix until just combined into a smooth batter.

    Gently fold the thin pear slices into the batter until they are well-coated.

    Pour the batter into the prepared cake tin, smoothing the top.

    Bake in the preheated oven at 160°C for 50-55 minutes.

Notes
