Ingredients

  • 200 g cottage cheese
  • 250 g overripe banana (the riper the better)
  • 50 g sugar substitute (sugar substitute)
  • 2 eggs (size M)
  • 1 tsp vanilla extract
  • 50 g vanilla protein powder
  • 140 g self-rising flour (self-rising flour)
  • 2 tsp baking powder
  • 1.5 tbsp white chocolate chips

Steps

    Preheat the oven to 170°C (340°F) and prepare a baking dish of approximately 22x15 cm.

    Place the cottage cheese and the overripe banana in a food processor or chopper and blend until you have a smooth mass.

    Pour the mixture into a mixing bowl and add the eggs, vanilla extract, and sugar substitute. Mix until a smooth batter forms.

    Sift the self-rising flour and baking powder over the bowl. Add the vanilla protein powder as well.

    Using a whisk, mix everything together thoroughly until there are no lumps left in the batter.

    Pour the batter into the prepared baking dish and sprinkle the white chocolate chips evenly over the top.

    Bake the breakfast cake in the oven for 40-45 minutes until beautifully colored. If the top gets too dark, you can lower the temperature to 160°C after 30 minutes or cover it with aluminum foil.

    Perform a 'skewer check' by inserting a toothpick into the center; if it comes out clean, the inside is fully cooked.

    Let the cake cool slightly before slicing, though it is also delicious served warm.

Notes

Variations: Instead of white chocolate, you can use cookie crumbs on top or fold fresh fruit into the batter before pouring it into the dish. Storage: This is great for meal prep as it lasts for several days.
