Single-Serve Tiramisu Quark Cheesecake

Ingredients
- 25 g Ladyfingers ((lange vingers))
- 200 g Low-fat vanilla quark ((magere vanille kwark))
- 10 g Vanilla protein powder ((vanille eiwitpoeder))
- 1 Vanilla flavor shot ((flavourshot vanille))
- 2 Gelatin sheets ((gelatineblaadjes))
- 1 cup Coffee (decaf coffee, optionally with a sweetener)
- Cocoa powder (for dusting)

Prepare a cup of (decaf) coffee, optionally adding a sweetener, and let it cool down slightly.

Place the gelatin sheets in a bowl of cold water to soak.

Dip the ladyfingers into the coffee and arrange them on the bottom of a small single-serve cake mold (approximately 12cm in diameter).

Remove the gelatin sheets from the water and place them in a small saucepan.

Heat the gelatin over low heat until it dissolves into a liquid jelly.

Add the vanilla quark, protein powder, and vanilla flavor shot to the saucepan.

Turn off the heat immediately and stir everything together thoroughly until the mixture is completely smooth and combined.

Pour the quark mixture over the coffee-soaked ladyfingers in the mold.

Place the cake in the refrigerator to set for at least 3 to 4 hours.

Once set, remove from the mold and dust the top with cocoa powder before serving.
