Ingredients
- 20 g flour (all-purpose flour; plus extra for dusting the bowl)
- 12 g protein powder (speculoos flavor protein powder)
- 40 ml semi-skimmed milk (semi-skimmed milk)
- 0.5 tsp cinnamon (ground cinnamon)
- 6 g speculoos paste (cookie butter)
- cooking spray (cooking spray for greasing)
Steps
- 1
In a bowl, combine the flour, protein powder, milk, and cinnamon.
- 2
Stir the mixture thoroughly until the batter is completely smooth and there are absolutely no lumps remaining.
- 3
Lightly grease a microwave-safe small bowl or ramekin with a tiny bit of cooking spray and spread it evenly with a brush.
- 4
Dust the greased bowl with a tiny bit of flour, ensuring it sticks to the sides, then pour the lava cake batter into the bowl.
- 5
Push the 6 grams of speculoos paste into the center of the batter.
- 6
Place the bowl in the microwave and cook for approximately 40-45 seconds at 400W.
- 7
Watch closely while it cooks; the cake is ready when it rises significantly and then appears to slightly 'collapse' or settle. It is best when the center remains moist and gooey rather than dry.
- 8
Remove from the microwave and serve immediately.
