Ingredients

  • 130 g sweet potato (cooked and mashed)
  • 300 g fat free milk (Fairlife recommended for higher protein)
  • 1 scoop vanilla whey protein
  • 1 tsp monk fruit sweetener (Lakanto brand recommended)
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • salt (pinch)

Steps

  1. 1

Place the cooked sweet potato, fat free milk, vanilla whey protein, monk fruit sweetener, cinnamon, vanilla extract, and a pinch of salt into a Ninja Creami pint container.

  2. 2

Whisk or blend the ingredients together until smooth and well combined.

  3. 3

Place the lid on the pint and freeze for 24 hours until solid.

  4. 4

Remove from the freezer and process in the Ninja Creami machine using the 'Lite Ice Cream' setting.

  5. 5

If the texture is crumbly after the first spin, add a splash of milk and use the 'Re-spin' function until creamy.

Notes

Per serving: 320 calories and 40g protein. The sweet potato provides a natural thickness and creaminess without the need for heavy cream. Ensure the sweet potato is fully cooked and mashed before mixing.
