Fit Crispy McBacon Style Burrito

Ingredients
- 6 Tortillas (about 50g each)
- 90 g Light protein cheese (grated)
- 3 slices Bacon (to be air-fried until crispy)
- 2 Pickles (finely chopped)
- 50 g Light mayonnaise
- 110 g Greek yogurt
- 1 g Salt (for the sauce)
- Sweet paprika (to taste)
- Garlic powder (to taste)
- 1 tsp Beef extract or bouillon (bouillon cube or meat extract)
- 25 g Sugar-free ketchup (zero-sugar ketchup)
- 20 g Mustard (yellow or dijon mustard)
- 400 g Extra-lean ground beef (extra-lean mince)
- 1 White onion (diced)
- 1 g Salt (for the meat)
- Black pepper (to taste)
- 25 g Tomato paste (double concentrated tomato paste)
- Extra virgin olive oil spray (for cooking)

Dice the white onion into small cubes. Place them in a pan with a splash of water and cook until softened.

Once the onion is soft, add the tomato paste to the pan and toast it for a minute to deepen the flavor.

Add the extra-lean ground beef to the pan. Season with salt and pepper and cook over high heat until fully browned.

Prepare the sauce: Finely chop the pickles. In a bowl, combine the chopped pickles, light mayonnaise, Greek yogurt, 1g salt, sweet paprika, garlic powder, beef extract (or bouillon), sugar-free ketchup, and mustard. Mix well.

Turn off the heat under the meat pan. Add the prepared sauce to the meat mixture and stir thoroughly until well combined.

Place the bacon slices in an air fryer at 200°C (390°F) for approximately 6 minutes until crispy. Once done, chop the bacon into fine pieces.

Briefly heat the tortillas in the microwave for about 15 seconds to make them more pliable.

Assemble the burritos: Place a portion of the meat and sauce mixture in the center of each tortilla. Top with the grated protein cheese and the chopped crispy bacon.

Fold and close the tortillas. Place them in a pan over high heat (using a spray of olive oil if needed) to sear the outside and seal the burritos shut.
Notes
Nutritional info per burrito (1 of 6): 320 Kcal, 35g Carbs, 25g Protein, 10.2g Fat. Using smoked paprika can add an extra layer of 'bacon' flavor to the sauce.
