Steps

Jicama Salad

  1. For the salad, place the jicama, lime zest, lime juice, cilantro leaves, cayenne pepper, smoked paprika, kosher salt, and 1 teaspoon water in a large bowl. Toss until combined.

  2. Add the diced avocado and toss very gently so the pieces remain intact. Cover and chill the salad for at least 1 hour and up to 4 hours before serving.

King Ranch Chicken

  1. Preheat the oven to 350°F (180 °C) (175°C (350 °F)). Spray a deep 9 × 13 × 3-inch baking dish with vegetable oil spray.

  2. In a 7-quart soup pot, heat the olive oil over medium heat.

  3. Add the diced onion and sauté until tender, about 6 minutes.

  4. Add the chicken broth, black beans, condensed cream of chicken soup, salsa verde, enchilada sauce, sour cream, smoked paprika, garlic salt, kosher salt, and black pepper. Stir until well incorporated.

  5. Bring the mixture to a simmer over medium heat.

  6. Stir in the shredded chicken, green chiles, tortilla strips, and grated Cheddar until well combined.

  7. Pour the mixture into the prepared baking dish and scatter the grated Monterey Jack over the top.

  8. Bake until heated through and the Monterey Jack is melted and lightly browned, about 30 minutes.

  9. Let the casserole stand for 10 minutes before serving.

  10. Just before serving, top the jicama salad with the minced chives. Serve the casserole with the salad. The episode tip also suggests sprinkling the casserole with cilantro and chopped jalapeño.

Notes

The source lists 8 to 10 servings and 1 hour 25 minutes total, including resting and cooling; active time is 40 minutes. The salad can chill for 1–4 hours. The episode tip specifies zest of 1 1/2 limes and 1 teaspoon smoked paprika, differing from the written recipe's 2 limes' zest and 1 teaspoon smoked paprika in the salad; the written ingredient list is retained. It also suggests cilantro and chopped jalapeño over the casserole. Store leftover casserole covered in the refrigerator for up to 3 days and leftover salad covered in the refrigerator for up to 1 day.
