Monchou Pancakes

Ingredients
- 65 g vanilla skyr (vanilla skyr)
- 65 g light cottage cheese (light cottage cheese, for the batter)
- 1 egg (size S)
- 1 vanilla flavor shot (vanilla flavor shot)
- 45 g flour (flour)
- 1 tsp baking powder (1 tsp baking powder)
- 50 g light cottage cheese (for the topping)
- 1 vanilla flavor shot (for the topping)
- 50 g cherry pie filling (cherry pie filling)
- 0.5 Lotus Biscoff cookie (Lotus Biscoff cookie)
Steps

Place 65g cottage cheese and 65g skyr in a food processor or blender and blend until completely smooth.

Transfer the blended mixture to a bowl and add the egg, vanilla flavor shot, flour, and baking powder.

Whisk the ingredients together until a smooth batter forms with no lumps.

Heat a pan over low heat and pour in the batter to make three pancakes.

Cover the pan with a lid and cook until bubbles form on the surface of the pancakes.

Flip the pancakes and cook for another 2-3 minutes on low to medium-high heat until cooked through.

While the pancakes cook, mix the remaining 50g cottage cheese with the second vanilla flavor shot until smooth.

Stack the pancakes, spreading the cottage cheese mixture between the layers and putting the majority on the top pancake.

Top the stack with the cherry pie filling and crumble the half Biscoff cookie over the top.
