Lahmacun Fit
A lighter lahmacun-style flatbread topped with lean ground turkey, finely chopped vegetables, herbs, spices, and zero-calorie barbecue sauce. The thin lavash base is baked until the topping is cooked and finished on the grill for extra crispness, then served with lemon and fresh onion.

Ingredients
- 2 white onions (Finely chopped)
- fresh parsley (Finely chopped, to taste)
- 2 tomatoes (Finely chopped)
- 2 green bell peppers (Finely chopped; remove seeds if desired)
- 1 yellow bell pepper (Finely chopped; remove seeds if desired)
- 3 red bell peppers (Finely chopped; remove seeds if desired)
- 550 g lean ground turkey (Lean minced turkey)
- 3 g salt
- paprika (To taste)
- black pepper (To taste)
- garlic (To taste; minced or finely chopped)
- 60 ml zero-calorie barbecue sauce (The creator specifies a 0-calorie BBQ sauce)
- 3 thin lavash sheets (Divide each sheet in half to make 6 pieces of approximately 50 g each)
- lemon juice (For serving, to taste)
- fresh onion (For serving, sliced, to taste)

Wash all the vegetables. Remove the seeds from the peppers if desired, then finely chop the onions, parsley, tomatoes, and peppers with a knife. The vegetables should be fairly finely chopped but should retain some texture; if using a blender, pulse briefly and do not puree them.

If the chopped vegetables release a large amount of liquid, drain or remove some of it so the topping will not make the lavash soggy.

Add the lean ground turkey to the chopped vegetables.

Add the salt, paprika, black pepper, garlic, and zero-calorie barbecue sauce. Mix thoroughly until the turkey and vegetables are evenly combined.

Divide the three thin lavash sheets in half to make six pieces. Place the filling on the inner surface of each lavash piece.

Spread the filling into a very thin, even layer all the way to the edges of each lavash piece. A thin layer helps the turkey cook through while the base crisps.

Preheat a fan-assisted oven to 220°C / 428°F. Arrange the topped lavash pieces on a baking sheet lined with parchment paper.

Bake for approximately 8 minutes, until the turkey topping is cooked and the edges of the lavash are crisp. Check that the turkey reaches 74°C / 165°F internally.

For a crisper base, transfer the baked lahmacun briefly to the oven grill/broiler for about 2 additional minutes, watching closely so the lavash does not burn.

Serve with fresh onion and lemon juice if desired. Roll each lahmacun and eat while warm.
Notes
The creator states approximately 300 kcal per serving, with 36 g carbohydrate, 27 g protein, and 8.5 g fat; actual values vary with the lavash, turkey, and BBQ sauce used. Drain excess vegetable liquid to help prevent a soggy base.
