Ingredients

  • 1 mini Dutch egg cake (approximately 25 grams)
  • 125 g low-fat vanilla quark (low-fat vanilla quark)
  • 40 g banana (mashed or finely chopped, for the filling)
  • 0.5 tsp cinnamon (for the filling)
  • 0.75 gelatine leaf (soaked in cold water)
  • 40 g banana (sliced, for topping)
  • 0.25 tsp cinnamon (for topping)

Steps

    Soak the 0.75 gelatine leaf in a bowl of cold water for about 5-10 minutes until soft.

    Place the mini egg cake at the bottom of a small springform pan or a food ring to serve as the base of the cake.

    In a mixing bowl, combine 125 grams of low-fat vanilla quark with 40 grams of mashed banana and 0.5 teaspoon of cinnamon. Stir until well combined.

    Heat a small amount of water (about a tablespoon) in a saucepan or microwave. Squeeze the excess water from the soaked gelatine leaf and dissolve it into the warm water.

    Quickly stir the dissolved gelatine into the quark mixture until fully incorporated.

    Pour the quark mixture over the egg cake base in the mold and smooth the top.

    Place the cake in the refrigerator to set for at least 2 hours.

    Once set, remove the cake from the mold. Top with the remaining 40 grams of sliced banana and sprinkle with 0.25 teaspoon of cinnamon before serving.

Notes

If you cannot find Dutch egg cakes (eierkoeken), a soft sponge cake or a digestive biscuit base can be used as a substitute, though the calorie count will change. Ensure the gelatine is completely dissolved to avoid lumps in the quark.
