Ingredients
- 2 slices white or sourdough bread (Use white bread or sourdough.)
- 75 g frozen blueberries (Use less if you don’t want it very blueberry-forward.)
- 1 tsp honey
- 1 tsp fresh thyme
- 2.5 tbsp butter (The recipe lists 2–3 tbsp total; 1 tbsp is used to fry the bread. Amount normalized to the midpoint of the listed range.)
- 5 large slices brie (The recipe calls for 4–5 large slices.)
- black pepper (Generous pinch; amount to taste.)
- salt (Generous pinch; amount to taste.)
Steps
- 1
Put the frozen blueberries in a saucepan over medium heat. Stir as they warm until they release their juices and form a sauce; continue stirring until the compote reaches your desired consistency.
- 2
Heat 1 tablespoon of the butter in a frying pan. Add the bread slices and fry, flipping once, until both sides are golden and crispy.
- 3
Layer one slice of bread with the brie, blueberry compote, honey, fresh thyme, and a generous pinch of salt and pepper.
- 4
Place the second bread slice on top to form a sandwich. Return it to the frying pan and cover the pan.
- 5
Cook for around 1 minute on each side, until the brie has melted.
- 6
Slice the toastie and serve.
Notes
The stated butter amount is 2–3 tbsp total, with 1 tbsp specified for frying; the source does not explain how the remaining butter is used. Bread type is given as white or sourdough. The recipe does not specify a quantity for the brie slices beyond 4–5 large slices.
