Fit Kebab with a Crispy Rice Paper Pocket

Ingredients
- 2 fogli Rice paper (Approximately 28 kcal per sheet)

Prepare the fit tzatziki sauce: place the 0% Greek yogurt in a small bowl. Add the lemon juice, chives, salt, and pepper, then stir until smooth. Set aside.

Crack the egg into a shallow dish and beat it with a fork until uniform.

In a second small dish, mix the spelt flour with a splash of plant-based milk, preferably almond milk, until you have a smooth, spreadable cream with no lumps.

Dip the first sheet of rice paper into the beaten egg, coating it evenly. Place it on a cutting board and brush it with the spelt flour cream.

Place the second sheet of rice paper over the first and fold the sheet in half to form the base of the pocket.

Sprinkle the surface with black sesame seeds, if using.

Cook the base in the air fryer at 180 °C for 11-15 minutes, checking it at around 11 minutes. It is ready when it puffs up and becomes crispy.

While the base is cooking, cut the chicken breast into thin strips.

Heat a pan over high heat. Add the chicken and your preferred seasoning, then sear without adding oil, stirring until the chicken is well browned and fully cooked.

Carefully open the crispy pocket, watching out for steam and taking care not to break it.

Spread the fit tzatziki sauce inside the pocket.

Fill with the lettuce, tomato, onion, and hot chicken. Serve immediately while the pocket is still crispy.
