Rice Paper Croque Madame
A light, gluten-free version of the classic French croque madame, made with rice paper, turkey, light cheese, and egg. It turns out very crispy on the outside and tender inside, with a runny egg.

Ingredients
- 2 hojas Rice paper
- 2 Eggs (One for coating the rice paper and another to place in the center.)
- 40 g Turkey breast (It can also be replaced with lean cooked ham.)
- 1 loncha Light cheese (Approximately 20 g.)
- 15 g Mustard or sugar-free sweet mustard (Use enough to spread; the author mentions GymBeam mustard.)
- 10 g Sesame seeds (To taste, for covering the surface and achieving a crispy finish.)
- Salt (To taste.)
- Black pepper (To taste.)

Crack one of the eggs into a wide dish and beat it until the egg white and yolk are fully combined. It will be used as an egg wash for the rice paper.

Spread a layer of sesame seeds over a cutting board or flat surface so that the sheets can be placed directly on top of them.

Dip both rice paper sheets into the beaten egg, wetting them on both sides. Immediately place them on the sesame seeds so the seeds adhere.

Spread the sugar-free mustard over the rice paper. Add the slice of light cheese and the turkey breast, leaving a small space free in the center for the second egg.

Fold the edges of the rice paper inward, like a parcel or envelope, until the filling is enclosed and a central cavity remains open.

Crack the second egg into the central cavity. Sprinkle more sesame seeds and black pepper on top; add salt to taste.

Preheat the air fryer to 200 °C. Carefully place the parcel in the basket, taking care not to break the egg or the rice paper.

Cook at 200 °C for 7-10 minutes. Do not lower the temperature: the high heat helps the rice paper puff up and become very crispy on the outside, while the center remains tender and the egg can stay runny.

Carefully remove and serve immediately, while the exterior is golden and crispy.
Notes
The recipe provides approximately 260 kcal, 21 g of protein, 20 g of carbohydrates, and 10 g of fat per serving. A temperature of 200 °C is essential to achieve the crispy texture. The exact cooking time of 7-10 minutes will depend on the air fryer and the desired doneness of the egg.
