Ingredients
- 130 ml skim milk (or any other type of milk)
- 60 g flour (all-purpose)
- 1 vanilla flavor shot (optional, for extra sweetness)
- 80 g cottage cheese (light/low-fat)
- 10 g speculoos spread (such as Biscoff)
- 1 vanilla flavor shot (optional, for the mousse)
- melted speculoos or cookie crumbs (optional drizzle or topping)
Steps
- 1
Start by making the crepe batter: place the milk and flour in a small food processor or blender and mix until you have a smooth batter.
- 2
Optionally, add a vanilla flavor shot to the batter if you prefer a sweeter taste.
- 3
Place a small non-stick frying pan over medium-high heat.
- 4
Pour a small amount of batter into the pan and cook the crepes. You should be able to make approximately 6 small crepes (about 13 cm in diameter) from this batter.
- 5
Make the speculoos mousse by combining the cottage cheese, speculoos spread, and the optional second vanilla flavor shot in a food processor.
- 6
Blend until the mixture is a completely smooth, uniform mass.
- 7
Spread the speculoos mousse evenly over the cooked crepes.
- 8
Roll or fold the crepes as desired and serve immediately.
- 9
Optionally, drizzle with a little extra melted speculoos spread or sprinkle with cookie crumbs (schuddebuikjes) for garnish.
