Next-Level Mashed Potatoes

Ingredients
- 1 kg potatoes (peeled and cut into uniform pieces)
- water (enough to cover the potatoes)
- salt (for the water and to taste)
- 4 tbsp butter (enough to melt)
- 4 garlic (cloves finely minced)
- 1 cup cilantro (a good handful finely chopped)
- 0.5 cup milk (added little by little)
- pepper (to taste)
- 0.5 cup Parmesan cheese (grated)

Peel the potatoes and cut them into equal-sized pieces to ensure even cooking.

Place the potatoes in a pot with enough water and a bit of salt. Cook until they are completely soft (a fork should slide in easily).

While the potatoes are cooking, melt the butter in a pan over low heat.

Add the 4 finely minced garlic cloves to the butter and cook for approximately one minute so it releases its aroma without burning.

Add a bit of salt and the finely chopped cilantro to the butter mixture; mix for a few seconds and remove from heat.

Once the potatoes are ready, drain them very well and transfer them to a large bowl.

Mash the potatoes with a masher until you achieve a smooth purée without lumps.

Add the half cup of milk little by little while mixing to achieve a creamy and light texture.

Incorporate the butter, garlic, and cilantro mixture directly into the mash and mix well.

Season with pepper and additional salt to taste.

Add a generous amount of grated Parmesan cheese and mix until it melts with the residual heat of the potatoes.
Notes
The secret to this recipe is infusing the garlic in the butter over low heat to prevent it from becoming bitter. You can adjust the amount of milk depending on your preferred consistency.
