Homemade White Rice

Ingredients
- 2 cup long-grain white rice (Rinsed until the water runs almost clear and well drained)
- 2 tbsp vegetable oil (For sautéing)
- 0.5 cup white onion (Finely chopped)
- 2 cloves garlic (Chopped or crushed)
- 3 cup water or chicken broth (Hot)
- 1 tsp salt (Adjust to taste, especially if using broth)
- 2 tbsp fresh cilantro (Chopped, for serving; optional)

Rinse the rice under cold running water several times, until the water runs almost clear. Drain it very well to prevent splattering when it goes into the pot.

Heat the oil in a medium heavy-bottomed pot over medium heat. Add the onion and sauté for 2 to 3 minutes, until translucent.

Add the garlic and cook for about 30 seconds, stirring constantly, until fragrant without letting it brown too much.

Add the drained rice. Cook for 2 to 4 minutes, stirring, until the grains look slightly glossy and some begin to toast.

Pour in the hot water or broth and add the salt. Stir once and scrape the bottom of the pot to loosen any grains.

Increase the heat and bring the liquid to a boil. When the rice begins to emerge and the liquid level drops, reduce the heat to low.

Cover the pot and cook for 15 to 18 minutes, without uncovering or stirring, until the liquid has been absorbed and the grains are tender.

Turn off the heat and let the rice rest, covered, for 5 minutes. Then gently fluff the grains with a fork.

Serve hot and, if desired, finish with chopped fresh cilantro.
