Preheat the oven to 425°F (220°C). Line a large baking sheet with parchment paper, or lightly grease it.

Scrub the potatoes well and cut each one lengthwise into evenly sized wedges. Pat the cut surfaces very dry with a clean kitchen towel; removing excess moisture helps them crisp.

Place the potato wedges in a large bowl. Add the olive oil, garlic powder, paprika, oregano, salt, and black pepper, then toss thoroughly until every wedge is evenly coated.

Arrange the wedges in a single layer on the prepared baking sheet, leaving space between them. Place them cut-side down where possible so the surfaces brown evenly.
